    Hi Alejandro:
    A while since I posted, but have been busy with at least 1 loaf a week.
    it has nearly become second nature to produce a constant good loaf each time with very little effort.
    I am still unsure the reason for the dramatic reduction in water to get the loaf to self-support during the final rise – but never mind – everyone is happy to join in eating the end result – and that’s what counts.

      Hello Ian, It is good to hear from you. It sounds like you have developed a process that works for you and that is great! I will be posting a new bread video in the near future that will have higher hydration than the Italian Peasant Bread (66%). I look forward to hearing what you think of it.
